The copper bowl is a medium-sized mixing bowl that is used in cooking to whip egg whites and other such tasks. For winemaking, we just put it under the flow of wine during a pump-over whenever I smell hydrogen sulfide (a biproduct of stressed yeast during fermentation) and it cleans it up by adding oxygen. It is low-tech, very gentle and makes it easy for the folks in the cellar.
